Born and raised in Dundee, Craig grew up as a Dundee United supporter, and began his career as a youth with United. After being released in 1984, he played at junior level with Dundee Stobswell for a while, before signing for Forfar Athletic in 1985. He appeared regularly in midfield and played against his boyhood heroes in a Scottish Cup tie at Tannadice in March 1987, and again in the replay at Station Park.
His form over the next few years gained the attention of a few clubs, and Raith Rovers signed him in 1991. At Starks Park he converted to striker and formed a prolific partnership with Gordon Dalziel that helped Raith to the First Division title in May 1993. That summer he became Ivan Golac's second signing, returning to Tannadice for a fee reported to be £250,000, and made his debut in the opening League match of the season against Aberdeen at Tannadice. After a slow start, he finished the season as the Club's top scorer, and attained hero status at Tannadice by scoring the goal that won the Scottish Cup for United against Rangers in 1994 - the first time the Terrors had picked up the trophy in the Clubs history.
That amazing career high was quickly followed by one of the worst lows, as Craig's own form, together with a drought of goals throughout the team, saw United relegated from the top flight for the first time in 35 years. During the First Division campaign of 1995-96, Craig teamed up with Gary McSwegan and Robbie Winters to help fire United back to the Premier Division via a Play-Off against Partick Thistle. He finished as the Club's top scorer once more, including four in one game against Dumbarton and a hat-trick against Clydebank, and collected a runners-up medal in the final of the League Challenge Cup in 1995.
After helping United to regain top league status, he was out of contract in the summer and became the first player to leave the club under the newly introduced Bosman ruling. He then signed for Greek side Ionikos where he spent the next five years, winning a Greek Cup runners-up medal in 2000.
Craig returned to Scotland in July 2001 to join Hibs and a year later went to Dunfermline Athletic where he collected a Scottish Cup runners-up medal in 2004. His next move took him to Inverness Caledonian Thistle where he became player/manager in November 2004. In January 2006 he returned to United as player/manager but picked up a long term injury in his first game back as a player.
After an unsuccessful time at Tannadice he left and spent a short time playing for Aberdeen before returning to Inverness Caledonian Thistle for a second time there as player/manager. In 2009 he parted company with the Highland club but then signed for rivals Ross County as a player/coach until the end of the season. In June 2009 he retired as a player and became assistant manager at Ross County. He later had spells as a coach with Crawley Town, Brighton & Hove Albion youth academy, and Plymouth Argyle.
In February 2019 he was inducted into the Dundee United Hall of Fame.
